Low-sodium

Unsalted stock and two sauces

A pot of chicken water, a yogurt sauce, and a tomato sauce will season a week without a packet.

Simmer chicken or the bones and scraps you trust with onion, garlic, and a bay leaf in water. That liquid is stock. It will not taste like a salty carton. You can reduce it a little if you want it louder.

Sauce one: plain yogurt, lemon, garlic, dill. Sauce two: no-salt tomato, oregano, garlic, simmered 15 minutes. Both keep about four days. The tomato sauce freezes. The yogurt sauce does not.

Use them on the side of plain chicken or fish. The method is sauces worth making on Sunday and the sodium context is sauces and dressings.

Raw garlic in yogurt gets stronger every day. Plan to finish the jar.
