Sheet pan vs slow cooking
Sheet pans are for weeknights when you are home. Slow cooks are for food that should shred and can wait. They solve different evenings.
Use a sheet pan when you want dinner in under an hour and you are in the house. Use a long braise when the meat needs time and you can start earlier.
