Weeknight dinners
Cooking from the pantry
A pantry dinner starts with rice or oats, a can of no-salt beans or tuna, and eggs. Those three, plus an onion, cover a surprising number of tired nights.

In the portions written below, protein is about 6–30 g, calories about 140–520, and sodium about 55–250 mg. Those are rounded kitchen estimates before extra cheese, bread, or a heavy pour of sauce.
Restock the one can you used. A pantry works until the night it is empty.
How to run it
- Start with mild chickpea and spinach curry. Plan on about 30 minutes. Cook the onion, garlic, ginger, and curry powder in a little oil until the onion is soft.
- Next, rice, beans, and eggs. This is the single-person dinner that uses what is already cooked. Two eggs are doing more work than one.
- Keep peanut oat bites for the meal that needs to feel different. Keep chilled. Freeze up to 2 months for quality. No leftovers chart gives this no-cook bite a day count.
- Cool anything you will not eat right away within two hours. For peanut oat bites: Keep chilled. Freeze up to 2 months for quality. No leftovers chart gives this no-cook bite a day count.

Curry powder, not a salty curry paste, is how this stays mild and lower in sodium. Taste before you decide it needs salt.

Storage times are general guidance, not a lab test of this recipe. A shorter package or recipe instruction governs. Freezing and reheating do not rescue food left out too long, or a heat-stable toxin that already formed. USDA FSIS: Leftovers and Food Safety and USDA FSIS: Freezing and Food Safety.

Chill cooked rice promptly. Vomiting-type Bacillus cereus illness is generally tied to rice and other starchy foods, and that emetic toxin can survive heat that kills the bacteria. FDA Bad Bug Book: Bacillus cereus.

Two bites are a snack next to a piece of fruit or a yogurt, not a meal. The protein number is per bite on purpose so it does not get inflated.
Ingredients
- 1 cup oats
- 1/2 cup peanut butter
- 3 tablespoons honey
- 2 tablespoons dry milk powder, optional
- pinch of salt, optional
Method
- Stir everything until it clumps. Skip the salt if the peanut butter is already salted, which it usually is.
- Roll 10 bites. Chill 30 minutes so they hold.
Keep chilled. Freeze up to 2 months for quality. No leftovers chart gives this no-cook bite a day count.

Details that matter
- Cut vegetables while something else cooks. Idle standing is what makes 30 minutes feel like an hour.
- Set the table before you start if other people are involved. It makes the meal real.
- One pan is a feature. Scrape it, soak it, and sit down.
Easy mistakes
Cooking a different meal for every eater
One base, different add-ons: more rice for the hungry person, sauce on the side, a milder portion for a child.
No leftovers plan
Cook a little extra rice or chicken on purpose so lunch exists.
