Freezer and batch cooking

Cooling food safely before it freezes

Refrigerate cooked food within 2 hours, or within 1 hour when the air temperature is above 90°F. That is a maximum, not a cooling target. Split large amounts into shallow containers. The clock starts when the food leaves the heat.

In the portions written below, protein is about 32–36 g, calories about 420–460, and sodium about 160–310 mg. Those are rounded kitchen estimates before extra cheese, bread, or a heavy pour of sauce.

A deep pot of chili stays hot in the center for a long time. Split it into shallow pans.

How to run it

  1. Turn the food into a wide baking dish so it is no more than a couple of inches deep.
  2. Set that dish in an ice bath if you are in a hurry, stirring now and then.
  3. Refrigerate until it is cool, then move portions to the freezer.
  4. Do not stack hot containers on top of frozen meals.

Dry lentils are one of the cheapest proteins in the store. Canned lentils work in a pinch; rinse them and cut the simmer to 15 minutes.

Ingredients

  • 1 1/2 cups dry brown lentils, rinsed
  • 1 onion, diced
  • 3 carrots, diced
  • 3 garlic cloves, chopped
  • 1 can no-salt-added crushed tomatoes
  • 6 cups water
  • 1 teaspoon cumin
  • 1 teaspoon paprika
  • 2 tablespoons olive oil
  • 2 cups plain nonfat Greek yogurt, 1/2 cup per bowl
  • lemon

Method

  1. Soften the onion, carrots, and garlic in the oil for 6 minutes. Stir in the spices.
  2. Add lentils, tomatoes, and water. Simmer 30–35 minutes, until the lentils are tender. Add water if it gets stiff.
  3. Each bowl gets 1/2 cup yogurt and a squeeze of lemon at the table. The yogurt is counted in the protein.

Fridge 4 days. Freezer: best quality within 3 months (stew, without the yogurt). Cool within 2 hours before it goes in the freezer. If you serve it hot, reheat to 165°F with a food thermometer.

Storage times are general guidance, not a lab test of this recipe. A shorter package or recipe instruction governs. Freezing and reheating do not rescue food left out too long, or a heat-stable toxin that already formed. USDA FSIS: Leftovers and Food Safety and USDA FSIS: Freezing and Food Safety.

Regular canned beans and a seasoning packet will quietly double or triple the sodium. No-salt-added is the whole trick.

Ingredients

  • 1 1/2 pounds lean ground turkey
  • 1 onion, diced
  • 1 bell pepper, diced
  • 2 cans no-salt-added beans, rinsed
  • 1 can no-salt-added crushed tomatoes
  • 2 tablespoons chili powder
  • 1 teaspoon cumin
  • 1 teaspoon garlic powder
  • 1 cup water

Method

  1. Brown the turkey with the onion and pepper until the turkey is cooked through.
  2. Add beans, tomatoes, spices, and water. Simmer 20 minutes.
  3. Thin with water if you want it more like a stew for a softer meal.

Fridge 4 days. Freezer: best quality within 3 months in flat containers so it thaws faster. If you serve it hot, reheat to 165°F with a food thermometer.

Details that matter

  • Thaw in the fridge, not on the counter. A sealed bag in cold water is the faster safe option if you change it every 30 minutes.
  • If you serve leftovers hot, reheat them to 165°F with a food thermometer. That does not apply to food you eat cold.
  • Most cooked meals are at their best within 2–3 months. Safe and delicious are not the same date.
