Family recipes and binders

A holiday section for the binder

Give holidays their own divider only for the meals you repeat. A timeline on the back of the page, written backward from dinner, is more useful than another photo of the table.

In the portions written below, protein is about 36–40 g, calories about 420–490, and sodium about 180–310 mg. Those are rounded kitchen estimates before extra cheese, bread, or a heavy pour of sauce.

A holiday section that ignores who brings what becomes a duplicate of three people's pies.

How to run it

  1. List the meal, the time you eat, and who cooks each dish.
  2. Note what can be made two days ahead.
  3. Write the oven schedule so two things are not fighting for 375°F.
  4. File the page where next year you will look first.

Regular canned beans and a seasoning packet will quietly double or triple the sodium. No-salt-added is the whole trick.

Ingredients

  • 1 1/2 pounds lean ground turkey
  • 1 onion, diced
  • 1 bell pepper, diced
  • 2 cans no-salt-added beans, rinsed
  • 1 can no-salt-added crushed tomatoes
  • 2 tablespoons chili powder
  • 1 teaspoon cumin
  • 1 teaspoon garlic powder
  • 1 cup water

Method

  1. Brown the turkey with the onion and pepper until the turkey is cooked through.
  2. Add beans, tomatoes, spices, and water. Simmer 20 minutes.
  3. Thin with water if you want it more like a stew for a softer meal.

Fridge 4 days. Freezer: best quality within 3 months in flat containers so it thaws faster. If you serve it hot, reheat to 165°F with a food thermometer.

Storage times are general guidance, not a lab test of this recipe. A shorter package or recipe instruction governs. Freezing and reheating do not rescue food left out too long, or a heat-stable toxin that already formed. USDA FSIS: Leftovers and Food Safety and USDA FSIS: Freezing and Food Safety.

This is the plain roasted chicken you can turn into soup, a salad, or a rice bowl. Do not drown it in dressing on Sunday.

Ingredients

  • 1 3/4 pounds boneless skinless chicken thighs
  • 2 tablespoons olive oil
  • 2 lemons
  • 3 garlic cloves, chopped
  • 1 teaspoon dried oregano
  • 1/2 teaspoon black pepper
  • 3 cups cooked rice
  • a cucumber, for a side salad

Method

  1. Heat the oven to 400°F. Toss the chicken with oil, the juice of one lemon, garlic, oregano, and pepper.
  2. Roast 22–28 minutes, to 165°F in the thickest piece.
  3. Slice and serve over rice with the second lemon. Cucumber on the side, not mixed in, so tomorrow's lunch is not wet.

Chill cooked rice promptly. Vomiting-type Bacillus cereus illness is generally tied to rice and other starchy foods, and that emetic toxin can survive heat that kills the bacteria. FDA Bad Bug Book: Bacillus cereus.

Details that matter

  • Note the pan size and the oven you used. Old recipes assume equipment you may not own.
  • Photocopy or scan the stained original and slip it in a sleeve behind the clean page.
  • A binder can live in the kitchen. A file on a phone that nobody opens is not a family cookbook yet.
