Freezer and batch cooking
How to label freezer meals
A label needs the name, the date, and the portions. Masking tape and a marker beat a cute system you will not keep up on a Sunday.
Freezer · 4 min read · Updated 2026-11-05
In the portions written below, protein is about 14–30 g, calories about 240–470, and sodium about 140–220 mg. Those are rounded kitchen estimates before extra cheese, bread, or a heavy pour of sauce.
Labels on the lid only fail when the lid comes off in the freezer. Write on the bag or the side too.
How to run it
- Write the recipe name in words you will recognize when tired.
- Add the date frozen and the number of servings.
- Add a reheat note if it is not obvious, such as 'microwave to 165°F.'
- Put newer meals behind older ones, or keep a door list.

This is a high-volume bowl, not a 40-gram protein meal. Pair it with a yogurt jar or an egg if you are also trying to eat more protein.
Ingredients
- 1 onion, 2 carrots, 2 celery ribs, diced
- 2 garlic cloves
- 1 can no-salt-added white beans, rinsed
- 1 can no-salt-added tomatoes
- 6 cups water
- 2 cups chopped cabbage or zucchini
- 1/2 cup small pasta
- 1 tablespoon olive oil
- 1 teaspoon Italian herbs
- parmesan, optional, at the table
Method
- Soften the onion, carrot, celery, and garlic in the oil.
- Add beans, tomatoes, water, herbs, and cabbage. Simmer 15 minutes.
- Add the pasta and cook until tender. Parmesan stays on the side because it is salty and because the pot may be going into the freezer.
Fridge 4 days. Freezer: best quality within 3 months (without the pasta). If you serve it hot, reheat to 165°F with a food thermometer.
Storage times are general guidance, not a lab test of this recipe. A shorter package or recipe instruction governs. Freezing and reheating do not rescue food left out too long, or a heat-stable toxin that already formed. USDA FSIS: Leftovers and Food Safety and USDA FSIS: Freezing and Food Safety.

Curry powder, not a salty curry paste, is how this stays mild and lower in sodium. Taste before you decide it needs salt.

- 4 cups spinach
- 2 cups plain Greek yogurt, for serving

Details that matter
- Leave a little headspace in jars and tubs. Liquid expands.
- Label the name, the date, and how many portions. 'Soup' is not a label.
- Thaw in the fridge, not on the counter. A sealed bag in cold water is the faster safe option if you change it every 30 minutes.
Easy mistakes
Freezing a whole pot while it is still hot
You warm every other frozen meal in that freezer, and the food spends too long in the danger zone.
Freezing lettuce, cucumber, potatoes in cream, or fried coatings
They turn watery or limp. Freeze the stew, the sauce, the burrito, the meatballs. Add the crisp part later.
