What to write besides the ingredients
Besides ingredients, write the pan size, the heat, the visual cue for done, and the last thing the cook always does. Those four lines are why someone else can repeat it.

In the portions written below, protein is about 32–36 g, calories about 430–480, and sodium about 180–520 mg. Those are rounded kitchen estimates before extra cheese, bread, or a heavy pour of sauce.
'Cook until done' is not a step. Say what done looks like.
How to run it
- Yield: how many people, and whether there were leftovers.
- Equipment: the skillet size or the baking dish.
- The cue: color, thickness, or temperature.
- The note: what you would change, written separately from the original.

Canned enchilada sauce is often the saltiest thing in the aisle. Tomato sauce plus chili powder is the same mood with a number you can live with. The cheese is why this is not filed under low-sodium.
Ingredients
- 1 pound shredded cooked chicken, or raw thigh meat cut small
- 1 can no-salt-added black beans, rinsed
- 1 can no-salt-added tomato sauce
- 2 teaspoons chili powder
- 1 teaspoon cumin
- 4 corn tortillas, cut in strips
- 1/2 cup shredded cheese
- a handful of cilantro
Method
- Simmer the sauce, spices, beans, and chicken 10 minutes. If the chicken is raw, cook it through to 165°F in the sauce.
- Stir in the tortillas. Sprinkle the cheese on top and cover 3 minutes, until it melts.
- Serve with cilantro. A dollop of plain yogurt cools it without a salty crema.
Fridge 4 days. Freezer: best quality within 2 months. The tortillas soften, which is fine in a skillet and bad if you wanted chips. If you serve it hot, reheat to 165°F with a food thermometer.
Storage times are general guidance, not a lab test of this recipe. A shorter package or recipe instruction governs. Freezing and reheating do not rescue food left out too long, or a heat-stable toxin that already formed. USDA FSIS: Leftovers and Food Safety and USDA FSIS: Freezing and Food Safety.

Chuck becomes soft if you give it time. This is a better senior meal than a grilled steak, and it freezes like it was born to.
Ingredients
- 2 pounds beef chuck, trimmed and cut in cubes
- 1 onion, diced
- 3 carrots, sliced
- 2 celery ribs, sliced
- 3/4 cup pearl barley
- 6 cups water
- 2 tablespoons no-salt-added tomato paste
- 1 teaspoon dried thyme
- 1 bay leaf
- 1 tablespoon oil
Method
- Brown the beef in oil in a heavy pot. Add the onion for 3 minutes.
- Add everything else. Simmer, covered, 1 1/2 to 2 hours, until the beef shreds when pressed.
- Add water if the barley drinks the pot dry. Remove the bay leaf.
Fridge 4 days. Freezer: best quality within 3 months. Cool the pot within 2 hours; a wide container in an ice bath is faster than the pot on the counter. If you serve it hot, reheat to 165°F with a food thermometer.

Details that matter
- A binder can live in the kitchen. A file on a phone that nobody opens is not a family cookbook yet.
- Write the story in the margin: who cooked it, the holiday, the pan they used, the thing they never measured.
- One recipe this weekend is enough. A binder that starts with forty blank pages stays blank.
Easy mistakes
Editing the cook out of the recipe
Keep their wording. You can add a note that says 'I use thighs now' without erasing them.

Twenty pages in, you will not remember which divider holds the soup. Number the pages and keep a list in front.
