Writing a recipe so a teenager can cook it

A recipe a teenager can cook names the tool, the heat, and what 'done' looks like. It also says when to turn the pan off. Assume they have not absorbed the kitchen by osmosis.

In the portions written below, protein is about 18–42 g, calories about 240–460, and sodium about 170–980 mg. Those are rounded kitchen estimates before extra cheese, bread, or a heavy pour of sauce.

Hand them the page and leave the room only after you have cooked it together once.

How to run it

  1. List tools at the top, including the sheet pan or the pot size.
  2. One action per line.
  3. Add temperatures for poultry and leftovers: 165°F.
  4. End with how to store what they do not eat.

Deli turkey is a different food. This roast is the way to get turkey sandwiches without 500 mg of sodium in two slices.

Ingredients

  • 2 pounds boneless turkey breast
  • 1 tablespoon olive oil
  • 1 teaspoon paprika
  • 1 teaspoon garlic powder
  • 1/2 teaspoon black pepper
  • 1/4 teaspoon salt, optional

Method

  1. Heat the oven to 375°F. Rub the turkey with oil and spices.
  2. Roast until the center is 165°F, often 45–60 minutes depending on thickness. Rest 10 minutes.
  3. Slice for dinners, and save the ends for lunch boxes and the potato bowl.

Fridge 4 days. Freezer: best quality within 2 months (slices with a little of the juice). If you serve it hot, reheat to 165°F with a food thermometer.

Storage times are general guidance, not a lab test of this recipe. A shorter package or recipe instruction governs. Freezing and reheating do not rescue food left out too long, or a heat-stable toxin that already formed. USDA FSIS: Leftovers and Food Safety and USDA FSIS: Freezing and Food Safety.

Many chicken sausages are 500–700 mg of sodium per link before the side dishes. Read the label. This recipe is here so the number is visible, not as a low-sodium suggestion.

Ingredients

  • 4 fully cooked chicken sausage links
  • 1 1/2 pounds potatoes, wedges
  • 2 bell peppers, sliced
  • 1 onion, sliced
  • 1 tablespoon oil
  • black pepper

Method

  1. Heat the oven to 425°F. Toss potatoes, peppers, and onion with oil. Roast 15 minutes.
  2. Add the sausages and roast 12–15 minutes, until the potatoes are tender and the sausages are hot.

Fridge 4 days. Fine as a weeknight, poor as a freezer project, and a bad fit when sodium is the assignment. If you serve it hot, reheat to 165°F with a food thermometer.

Details that matter

  • Photocopy or scan the stained original and slip it in a sleeve behind the clean page.
  • A binder can live in the kitchen. A file on a phone that nobody opens is not a family cookbook yet.
  • Write the story in the margin: who cooked it, the holiday, the pan they used, the thing they never measured.

Easy mistakes

Write one recipe after dinner. The binder grows from use.

Editing the cook out of the recipe

Keep their wording. You can add a note that says 'I use thighs now' without erasing them.
