Family recipes and binders

Saving a handwritten recipe

A handwritten card is a document. Scan it, sleeve the original, and write a readable copy so grease and time are not the only archivists.

In the portions written below, protein is about 32–36 g, calories about 420–460, and sodium about 160–310 mg. Those are rounded kitchen estimates before extra cheese, bread, or a heavy pour of sauce.

Do not rewrite their words into a blog voice. Copy first. Annotate second.

How to run it

  1. Photograph or scan the card in daylight, without flash glare.
  2. Slide the original into a plastic sleeve. Do not laminate the only copy if you can avoid heat on old ink.
  3. Transcribe it onto a clean page, keeping their measurements.
  4. Add a note where you had to interpret a stain or a missing step.

Dry lentils are one of the cheapest proteins in the store. Canned lentils work in a pinch; rinse them and cut the simmer to 15 minutes.

Ingredients

  • 1 1/2 cups dry brown lentils, rinsed
  • 1 onion, diced
  • 3 carrots, diced
  • 3 garlic cloves, chopped
  • 1 can no-salt-added crushed tomatoes
  • 6 cups water
  • 1 teaspoon cumin
  • 1 teaspoon paprika
  • 2 tablespoons olive oil
  • 2 cups plain nonfat Greek yogurt, 1/2 cup per bowl
  • lemon

Method

  1. Soften the onion, carrots, and garlic in the oil for 6 minutes. Stir in the spices.
  2. Add lentils, tomatoes, and water. Simmer 30–35 minutes, until the lentils are tender. Add water if it gets stiff.
  3. Each bowl gets 1/2 cup yogurt and a squeeze of lemon at the table. The yogurt is counted in the protein.

Fridge 4 days. Freezer: best quality within 3 months (stew, without the yogurt). Cool within 2 hours before it goes in the freezer. If you serve it hot, reheat to 165°F with a food thermometer.

Storage times are general guidance, not a lab test of this recipe. A shorter package or recipe instruction governs. Freezing and reheating do not rescue food left out too long, or a heat-stable toxin that already formed. USDA FSIS: Leftovers and Food Safety and USDA FSIS: Freezing and Food Safety.

Regular canned beans and a seasoning packet will quietly double or triple the sodium. No-salt-added is the whole trick.

Ingredients

  • 1 1/2 pounds lean ground turkey
  • 1 onion, diced
  • 1 bell pepper, diced
  • 2 cans no-salt-added beans, rinsed
  • 1 can no-salt-added crushed tomatoes
  • 2 tablespoons chili powder
  • 1 teaspoon cumin
  • 1 teaspoon garlic powder
  • 1 cup water

Method

  1. Brown the turkey with the onion and pepper until the turkey is cooked through.
  2. Add beans, tomatoes, spices, and water. Simmer 20 minutes.
  3. Thin with water if you want it more like a stew for a softer meal.

Fridge 4 days. Freezer: best quality within 3 months in flat containers so it thaws faster. If you serve it hot, reheat to 165°F with a food thermometer.

Details that matter

  • Write the story in the margin: who cooked it, the holiday, the pan they used, the thing they never measured.
  • One recipe this weekend is enough. A binder that starts with forty blank pages stays blank.
  • Copy the card in pencil first if the original is fragile, then write a clean page.

Easy mistakes

No index

Twenty pages in, you will not remember which divider holds the soup. Number the pages and keep a list in front.

Recipes with no yield

Write how many people it fed, even if the answer is 'our table of six, with leftovers.'
