Low-sodium
Cooking with less added salt
Cooking with less salt is a sequence: unsalted water for grains, no packet in the pot, acid at the end, and a decision about the plate. You do not have to make the food taste like a hospital tray.

This page uses larger type. It is cooking help, not a medical plan.
In the portions written below, protein is about 30–32 g, calories about 390–480, and sodium about 150–160 mg. Those are rounded kitchen estimates before extra cheese, bread, or a heavy pour of sauce.
Cutting salt overnight and changing nothing else makes food taste flat for a week. Add garlic, pepper, and lemon while your palate adjusts.
How to run it
- Leave salt out of the pot of soup, beans, or chicken.
- Use onion, garlic, and spices while the food cooks.
- Finish with lemon, vinegar, or herbs.
- If a person at the table can have salt, give them the shaker. Do not salt the shared pot for the person who cannot.

Soft enough for someone who wants an easy breakfast, and sturdy enough to wrap and take out the door.
Ingredients
- 1 ripe banana
- 2 eggs
- 1/2 cup oats
- cinnamon
- 1 teaspoon oil for the pan
- 3/4 cup plain nonfat Greek yogurt, for serving
Method
- Mash the banana. Stir in the eggs, oats, and cinnamon. Let it sit 3 minutes so the oats drink.
- Cook small pancakes in a lightly oiled skillet over medium heat, about 2 minutes a side, until the centers are set.
- Serve the whole batch with the yogurt. The yogurt is part of the plate, not a garnish.
Fridge 3 days. Freezer: best quality within 1 month (pancakes with paper between them). Add the yogurt when you eat. If you serve it hot, reheat to 165°F with a food thermometer.
Storage times are general guidance, not a lab test of this recipe. A shorter package or recipe instruction governs. Freezing and reheating do not rescue food left out too long, or a heat-stable toxin that already formed. USDA FSIS: Leftovers and Food Safety and USDA FSIS: Freezing and Food Safety.

Peanut butter adds a little sodium and a lot of staying power. Leave it out if you need the sodium lower, and the protein drops by about 4 grams.
Ingredients
- 1 cup unsweetened soy milk
- 3/4 cup plain nonfat Greek yogurt
- 1 banana or 1 cup frozen berries
- 1 handful spinach
- 1 tablespoon peanut butter
Method
- Blend everything until smooth. Add a splash of water if the blades stall.
- Drink it the day you make it, or pour it into a cold jar for the commute.
Fridge up to 24 hours. Shake before you drink. The freezer version is the smoothie-pack recipe.

Details that matter
- Cook in water or unsalted homemade stock. Carton broth is often 600–800 mg per cup.
- Buy no-salt-added beans and tomatoes. Rinse anything that did come from a salty can.
- Build flavor with garlic, onion, ginger, citrus, vinegar, pepper, herbs, and spices that do not say 'seasoning salt.'
Easy mistakes
A seasoning packet
Chili, taco, onion soup, and ranch packets are salt with a spice cameo. Use the spices listed in the recipe instead.
Hidden salt in the 'healthy' add-ins
Cottage cheese, soy sauce, and rotisserie chicken can wipe out an otherwise careful plate.
